Kids and sweet eaters will not be able to resist these very vanilla cupcakes decorated for Halloween.
Recipe: Very vanilla candy corn cupcakes with Halloween sprinkles
Serves 12
Cooking time: 20 minutes
Ingredients:
flour | 1 1/4 cup plus a well rounded tbsp
baking powder | 1 tbsp
salted butter | 150g or 1 1/4 cup
caster sugar | 3/4 cup
vanilla | 2 tablespoons
eggs | 3
Icing:
salted butter | 1/2 cup or 1 stick
icing sugar | 2 cups
vanilla paste | 2 tbsp
milk | 1 tbsp (added slowly)
candy corn, sprinkles or any orange and black treats broken up
Cooking:
Preheat oven to 175˚C
Cream together sugar and butter
Add vanilla and then eggs one at a time beating into the butter and sugar mixture
In a separate bowl mix together flour and baking powder
Slowly add the flour mixture to the ‘wet’ mixture until smooth
Dollop a large spoonful into each paper cupcake holder (or silicon) divided evenly between 12
Let cool before icing
Icing:
Mix the icing sugar, butter, and vanilla with a fork until smooth and thick
Add milk slowly and whip together
Add icing with either a spoon or decorating tool
On top of the icing add bits of candy delicately
